1 Extra long seedless Cucumber (1/2 of it long slices to make the roll, other 2" thin chopped
1/4 th red Pepper (2" thin chopped)
handful mixed baby greens
few drops of lemon juice
Avocado cheese ( mix the avocado with few drops olive oil, 2 pinches salt, few drops of lemon juice and 2 pinches garlic powder)
Take one of the cucumber long slices, spread the avocado cheese, towards one end, add about 2 cucumber pieces, 2 red pepper pieces, and another 2 cucumber pieces, spread some more cheese on the top add about 4 mixed baby green leaves, few drops of lemon juice (optional). And roll the cucumber slice. Repeat the same for other slices and voila you have the cucumber wraps.
Note: I normally like more of lemony taste. So you might want to taste the cheese to suit your taste buds.)
