Kokosová majonéza

As an excellent alternative to a traditional egg mayonnaise, this non-animal mayo made from fresh meat of young coconuts will easily reach your favourite salad dressing list once you find a while to whip it for the first time. / Výbornou náhradou tradiční vaječné majonézy pro váš oblíbený salát může být tato majonéza z mladých kokosů:

Yields: 1 cup / Množství: 1 šálek

Ingredients: / Složení:
1 cup coconut meat, fresh / 1 šálek čerstvého kokosu
3 tbspoons olive oil / 3 lžíce olivového oleje
1 tbspoon lemon / 1 lžíce citrónu
1 tbspoon agave nectar / 1 lžíce agávového sirupu
1 clove garlic / 1 stroužek česneku
A dash of Himalayan crystal salt / špetka himalájské soli
A pinch of cayenne pepper / špetka cayenského pepře
1 tbspoon chives, minced / 1 lžíce nadrobno nakrájené pažitky
1 tbspoon coconut water / 1 lžíce kokosového mléka


Instructions: / Postup:
Place all the ingredients to a blender and blend until smooth. Pour the mayo in a sealed glass container and refrigerate for at least 1 hour. / Uvedené suroviny rozmixujte dohladka a vzniklou majonézu nechte v uzavřené skleničce nejméně 1 hodinu vychladit.

You can add Coconut Mayonnaise to your salads as a rich dressing, to vegetable soups as a thickener or have it as a dip with veggie sticks or crackers. / Majonézu můžete použít jako dressing do salátu, k zahuštění zeleninových polévek nebo k namáčení krekrů.


In general, any type of mayonnaise, vegan or non-vegan, tends to be very rich providing the majority of calories from fat. Hence, you may want to ask; can I include this kind of food in a low-fat dietary programme? My answer is yes, absolutely!:)

I follow a low-fat diet myself and still use quite a bit of this delicious energetic fusion, mainly as a dressing on my green salads. I say energetic because I observed over the years that after eating a dish containing coconut meat my energy always steps up to a higher level in the following 24 - 48 hours. The true reasons behind this I am still
to research in more depth. However, from the current view-point I understand that the energy uplift has to do with the medium-chain fatty acids present in the coconut meat and their easy assimilation, quick conversion into energy and subsequent slow steady energy release in the body. In addition, fresh coconut meat is cholesterol free and still counts as a whole food meaning that apart from all the macronutrients, it has all the water, fibre, minerals, vitamins, antioxidants, enzymes and co-enzymes intact. Compared to pure vegetable oils or other fat/oil-rich dishes in which the majority of the micronutrients, water and fibre is lost during the production process.

So, if used reasonably in small amounts, there is no reason why you should not integrate Coconut Mayo into your health/energy-enhancing low-fat vegan diet.
